Sea Blite with Mole and Shrimp Cakes Recipe

Los Romeritos en revoltijo, o con mole, es uno de los platillos más importantes durante la navidad y el año nuevo. Hay quienes le agregan los nopales, camarones secos enteros, y algún otro ingrediente que forma parte de la receta familiar. En mi casa solo les ponemos las tortitas y las papas, porque así es como nos gustan, y siempre guardamos un poco para la semana santa o para apaciguar ese antojo que de pronto tenemos a mitad del año. Esta es la receta de mi mamá y espero la disfruten tanto como nosotros.

INGREDIENTES

  • 1 1/2 kilo washed sea blite
  • 1/4 kilo dried shrimp
  • 6 fresh eggs
  • 1/2 kilo small potatoes
  • 10 cooked sliced cacti
  • 1 kg mole paste
  • Chicken broth, the best kind for mole
  • Pork lard or frying oil
  • Salt

INSTRUCTIONS

Clean and wash the sea blite with enough water to remove the soil. Boil in water with salt and drain them once cooked.

Remove the shells from the shrimp and grind them into a fine powder.

Beat egg whites until they reach nougat point and then add the yolks and the ground shrimp. Form a paste. Fry teaspoons of the paste in very hot oil over low heat so they do not burn and sponge. Leave to brown and then remove from oil and drain.

Clean and boil the cacti in water with salt and a piece of onion. Drain them and let them cool. We do not add them in my home, but there are those who do. You can decide if you want the with cactus or not, since it is optional.

Add mole paste or powder with the chicken broth. Season with salt and simmer for half an hour or until everything is well incorporated. Add the sea blite, the cacti, the shrimp pancakes and the potatoes at the moment of serving.

Heads up, we do not add the nopales, the pancakes, or the potatoes to the sea blite until the moment of heating what is going to be served, since if you keep them in the refrigerator the mole, potatoes, and and the cacti will take on an unpleasant consistency. It is best to refrigerate everything separately and only heat what you are going to serve.
