Roasted Pork Recipe, an Easy Dish with an Elaborate Flavor

The Roasted Pork Recipe is a traditional recipe from the state of Coahuila. It is an easy dish to prepare and has an elaborate flavor. It is the book Las Senadoras suelen guisar (“Senators that Cook”), 1964.

INGREDIENTS for Roasted Pork

  • 1 kilo of pork
  • 1/4 red ancho chili
  • 1 green tomatillo
  • 8 cloves of garlic
  • Pinch of Cumin
  • Pinch of Pepper
  • Punch of Oregano
  • Orange zest (from a peel the size of a large coin)

Asado de Puerco

INSTRUCTIONS

Fry meat in small pieces, until it is well cooked and fried; rehydrate chili by soaking, then grind with garlic cloves, the cumin, pepper and oregano. Rub mixture into cooked, golden meat. Leave to season very well, allowing sauce to thicken the texture.
