Roasted Marinated Turkey Recipe, with that Mexican Touch for December Parties

This recipe gives the Mexican touch to one of the star dishes of the Christmas and New Year celebrations in Mexico. This Roasted Marinated Turkey Recipe, is one of the recipes that we pamper ourselves with at home and which we invariably repeat every couple of years. Enjoy!

INGREDIENTS for Roasted Marinated Turkey Recipe

  • 1 turkey (5kg)
  • 8 spicy guajillo chiles
  • 1 white onion
  • 1 head of garlic
  • 1 cup orange juice
  • 4 lemons, juiced
  • 50 gr. Achiotes
  • ½ cup pineapple juice
  • ¼ teaspoon cumin
  • 1 teaspoon oregano
  • ½ teaspoon cinnamon
  • Salt to taste
  • Pepper, to taste

INSTRUCTIONS

Devein the chiles and boil with onion, and half head of peeled garlic for 8 minutes. Blend with half a cup of orange juice, lemon juice, achiote, cumin, oregano, cinnamon, salt and pepper. Strain.

Separately, blend other half head of garlic with pepper, pineapple juice and the other half cup of orange juice. Rub turkey with the ground garlic mixture, pineapple juice and orange juice. Put the turkey in a tray, bathe it with the marinade, let marinate inside the refrigerator well covered with aluminum foil, ideally for an entire day, minimum of two hours.

Bake well covered at 350 ° F (175 ° C) for two hours, then let it cook for another three hours or so, depending on the weight and height where it is cooked. Uncover and leave to brown for 15-30 minutes.

Serve sliced, accompanied by white rice and mashed potatoes.
