Oaxacan cuisine is always comforting with all of its delicious recipes. This one of the Oaxacan Squash is simple to cook and very tasty. It can be prepared in advance and taken to the office or be ready to eat for dinner throughout the week.
Ingredients for Oaxacan Squash with Ancho Chili
Recipe yields 6 servings
- 2 tablespoons butter
- 1 dried poblano pepper, with seeds removed and sliced in strips
- 1 sliced onion
- 1/2 kg. diced zucchini
- 2 ears of corn, cut from the cob
- Salt to taste
- 3 tablespoons chopped epazote
- 250 grams fresh cheese, pulled apart into strings
In a medium fry the dried poblano pepper and onion in butter, adding oil as needed. Note: first put the onion and then the chili, because if it browns a lot takes a bitter note.
Add zucchini and corn and fry very well. Once everything is well seasoned, add half a cup of water and season with salt to taste. Cover pot and cook over a low heat. When the zucchini and the corn have cooked through, add the epazote and cheese. Remove from heat and serve.
