Pork in Four-Chilli Sauce Recipe

This recipe for Pork Leg in Four-Chilli Sauce is a traditional recipe for the Christmas, but we can enjoy it all year round because of how delicious it is. In my family, we make it for the New Year. It is accompanied with apple salad, romeritos or white rice.

INGREDIENTS for Pork Leg in Four-Chilli Sauce

  • 2 ancho chiles
  • 1 cascabel chili
  • 1 morita chili
  • 1 guajillo chili
  • 2 cups water
  • ½ cup white vinegar
  • ½ onion
  • 10 cloves garlic
  • ½ teaspoon ground pepper
  • ½ teaspoon ground cinnamon
  • ½ teaspoon coriander seeds
  • 1 pinch ground cumin
  • ½ teaspoon clove powder
  • ½ teaspoon salt
  • 4 bay leaves
  • Salt to taste
  • Pepper, to taste
  • 1 pork leg, 4 k
  • 1 cup mezcal
  • 2 tablespoons flour

Remove the stems and seeds from peppers. Boil peppers in water with vinegar, onion, garlic, ground black pepper, ground cinnamon, coriander seeds, ground cumin, clove powder, salt and bay leaves for five minutes. Remove the bay leaves and grind all remaining ingredients in  blender. Strain. Add salt and pepper to the pork leg. Place it in a deep pot and bathe with the blended chili mixture. Add the mezcal. Spread very well on all sides, cover and let marinate for at least one hour. It is better if it is prepared from the previous day and left to marinate overnight in the refrigerator. Before cooking, add two cups of water and bake covered at 350° F (175 ° C) for the necessary time. The leg takes one hour per kilo. Allow to cool slightly and slice, preferably with an electric knife. To make a sauce with remaining juice, heat oil in a pan and add one or two tablespoons of flour, add remaining juices from pork leg and, stir constantly with a wooden spoon, and heat until it forms a thick consistency. Serve the sliced ​​leg, bathed with the sauce and accompanied by apple salad.
