This is one of the recipes that most reminded me of my mother’s cooking, one that my father loved, and that he asked her to make at least twice a month. Here I share with you My Mother’s Pork in Peanut Sauce Recipe, that I hope from my heart that you enjoy as much as we do at home.
INGREDIENTES for Pork in Peanut Sauce
- 1 kg of pork loin
- 2 liters of water
- 3 guajillo chiles, washed, cored, seeded
- 1 toasted tortilla
- 1 cup peanuts
- ½ onion
- 1 tomato
- 2 garlic cloves
- oil for frying
- salt
INSTRUCTIONS
Boil meat in 2 liters of water, add 1 teaspoon salt and cook until meat is tender.
In a skillet fry guajillo chiles, peanuts, onion, red tomato, garlic cloves, until well browned. Remove from heat, peal the skin off the the tomato, and put everything in a blender. And add the toasted tortilla and blend all until sauce becomes smooth.
In a pot add oil and fry the meat until the meat is browned, add the sauce until everything is seasoned and the color has changed.
Serve with white rice and black beans.
