The great advantage of this time of year is that every Sunday I have a pretext to light the grill and invite people over to watch the NFL games. Even if they are not fans of American football, it is still worth coming just for the grilled goods. And there is nothing like grilling with fun recipes. Today we are going to grab the Mole Rojo Listo para Servir (“Red Mole Ready to Serve”) and we are going to prepare today’s menu: Mole Burgers.
INGREDIENTS for Mole Burgers:
- 350 gr. ground beef
- 350 gr. ground pork
- 1/2 grated onion
- 1/2 cup pitted green olives, coarsely chopped
- 1 tbsp of Worcester sauce
- Sea salt
- Black pepper
- 1 cup of Mole Rojo Listo para Servir Doña María (“Doña María Red Mole Ready to Serve)
- Queso Oaxaca (“Oaxaca cheese”, shredded)
Start by adding the meat, onion, olives, Worcester sauce, salt and pepper to a large bowl. Mix very well with clean hands until all of the ingredients are well integrated. It’s going to be a bit sticky, but do not worry. Refrigerate for a couple of hours. You can refrigerate overnight if desired.
To cook, start by lighting the grill. Make small balls of meat and with a tequila glass (or any shot glass) make a hole in the center, like a volcano. In the center of each burger, add a bit of shredded Oaxaca cheese and two tablespoons of Doña María Red Mole Ready to Serve. Close the hamburger carefully so that the center is completely covered. Lightly spray oil on the burgers. Extra trick: melt butter with chopped garlic and use a brush to varnish the hamburger.
Serve the burgers and accompany with whatever side dish is desired.
