INGREDIENTS for Day of the Dead Bread

  • 500 gms wheat flour
  • 150 gms sugar
  • 1 tsp salt
  • 1 tbsp instant yeast
  • 3 eggs
  • 1 tsp orange blossom essence
  • Lemon zest
  • 150ml marigold water: week 150 ml of water and add the petals from a couple marigold flowers. If the flower is not available to you, you could just add plain water or milk in the same proportion.
  • 250 gms butter
  • 1/3 cup of melted butter for finishing
  • 200 grams of sugar to sprinkle

INSTRUCTIONS (At the end of the recipe, there is a video showing the preparation)

In a bowl mix flour, sugar, salt and yeast. Empty it on a table and form a cavity in the center. Add the eggs mixed with the orange blossom essence and the lemon zest to the cavity and start kneading. As a sticky dough forms, add the merigold water (or milk) little by little while kneading energetically.

You will need approximately 20 minutes to achieve an elastic dough that looks even. Next add the butter (room-temperature, cubed) into the dough. Continue kneading until the dough comes of the table. Place the dough in a bowl and leave it to rise in a warm, moist place for an hour or until it doubles in size. Cut the dough into fist-sized portions or the equivalent of 85 grams if you want individual pieces.

Take a loaf and start rolling with one hand holding the dough and turning firmly to obtain a rounded piece. Place the piece on a lightly floured baking sheet and with the palm of your hand, tap it to flatten it. This portion of dough represents the «grave.» Cut two small pieces of dough and roll them with your hand and fingers. Slightly open to form the «bones» that represent the skeleton. Place one on the bread and form one more that will be placed crosswise. To finish forming the loaves, take a small portion of dough and give it the shape of a marble. This piece represents the «skull» and is placed in the center.

Let the loaves rest in a warm and humid place for 30 minutes so that they reach their final size. Preheat the oven for 15 minutes and bake at 200 ° C / 395 °F until the breads turn a golden color. After getting out of the oven the oven, varnish them with melted butter and sprinkle with sugar. This part is meant to counteract the sadness of death with sugar.
