This exquisite soup is very typical of Guanajuato, from our grandmothers’ kitchen, the kind of recipe that nurtures you. This delicious Curd Soup Recipe is one of the most traditional recipes of Mexican cuisine, and is very simple to prepare.

INGREDIENTS for Curd Soup
- 300 gr cottage cheese
- 120 gr natural goat cheese
- 1 cup sour cream
- 1 liter milk
- 1 small onion, finely chopped
- 6 sprigs of finely chopped green epazote
- 3 serrano chiles, minced
- 3 tbsp butter
- 2 cups fat-free chicken broth
- Salt and pepper to taste
To garnish:
- 8 flour tortillas
- 1 cup refried beans
- ¼ cup corn oil for frying
- 8 fried green epazote leaves
- 1 small red onion finely chopped
INSTRUCTIONS
Blend the cottage cheese, goat cheese, fresh cream and milk in a blender. Add the chopped raw onion, epazote, chiles and season with some salt and pepper.
In a saucepan melt butter and stir in the blended mixture. Incorporated the warm chicken broth with a whisk (temper by adding a little bit of the heated mixture to neutralize the temperature before adding the broth to the pan), correct the seasoning and reserve. The texture must be smooth.
To decorate, assemble flour tortillas with refried beans, in the form of flutes. To assemble the soup in a soup bowl, pour the cream spread and garnish with bean flute. Garnish with a sprig of epazote and sprinkle with fried onions.
