Here is a delicious Christmas recipe with the coveted ingredient of the season: The Cod with Tangerine Sauce by Chef Rubén Amador.
INGREDIENTS for Cod with Tangerine Sauce
- 1 kilo fresh cod
- ½ kilo manzanita
- 1 small beet
- 8 asparagus
- ½ liter orange juice
- 1 tangerine
- 1 cup sugar

Poach cod at more than 80 degrees Celcius, for about 8 minutes.
Prepare sauce with the orange juice, add sugar until it caramelizes; add a few mandarin segments to aromatize.
Cook the manzanitas, remove and cut into slices, sauté with a butter and sugar. Cook beet and dice.
Finally place the fish on a plate and bathe with the sauce, top with manzanita and beets.
