INGREDIENTS for Christmas Cod Tostada
- Olive oil
- 3 cloves of garlic, finely chopped
- ¼ onion, cut in small cubes
- 200 gr tomato, finely chopped in small cubes
- 200 gr salt cod, shredded
- 20 gr capers
- 20 gr green olives, without pits
- 20 gr güero chilies
- 10 gr parsley, finely chopped
- 100 gr of flour
- 3 gr of baking powder
- 10 gr of olive oil
- 3 gr of dried oregano
- Salt to taste
- Coriander sprouts to decorate
Heat the oil. Sauté garlic and onion, add tomato and cook for 10 minutes. Add cod, capers, olives and chilies. Cook over low heat for 5 minutes, remove from heat and add the parsley.
For tostadas: Mix all ingredients to form an elastic dough that does not stick to the table. Stretch the dough into a thin layer, cut into small rectangles and bake at 180 ° C for 8 minutes.
For assembly: Arrange a spoonful of cod on a tostada, add a little olive oil and garnish with cilantro sprouts.
