This Chocolate and Dried Fruit Tamale Recipe was shared with us by Chef Guillermo Tinoco, who is one of those chefs who makes us feel jealous of the talent in Mexico. A graduate of Ambrosia Centro Culinario, he has headed various restaurants, and in recent years at the head of the mezcalería and restaurant Corazón de Maguey in the Coyoacan neighborhood, in Mexico City.

Ingredients for Chocolate and Dried Fruit Tamale
- 200 grams lard
- 1 kilo corn dough
- 200 grams chocolate paste
- 100 grams sugar
- 200 grams nuts
Red wine sauce and nuts:
- 50 milliliters red wine
- 30 milliliters water
- 30 grams sugar
- 50 grams nuts
INSTRUCTIONS
Beat the butter until it becomes fluffy. Mix the corn dough with butter. Add chocolate paste and sugar. Form the tamales and fill with the nuts. Steam in a steep pot until they are cooked.
For the sauce of red wine and nuts: Heat the wine with water and sugar to form a honey-like consistency. Add the fruits and reserve for use.
