When I found the recipe for Black Bean Tortillas with Mango Salad I initially thought it was a strange combination of things. But after making it I stood corrected. When we made it at home it turned out great. We found it while looking for recipes for a vegetarian friend who wound up just as surprised as we were about how tasty it was.
INGREDIENTS for Black Bean Tortillas with Mango Salad
For the Tortillas
- Tortilla dough
- 3 Tb mashed black beans
For the Salad
- 1 cup diced mango
- 1 cup diced tomatoes
- 1 cup of cooked black beans without the liquid
- 1/2 cup chopped cilantro
- 1 Tb olive oil
- Lime juice
- a pinch of salt
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 1 chopped jalapeño pepper or to taste
- 1/4 tsp chili powder
For the tortillas:
Follow the instructions of the tortilla dough package. For every two cups of dough add 3 tablespoons of black bean puree. Add water according to the package instructions. Make 1 1/2 inch diameter dough balls. Use an omelette device to shape them.
Cook according to package instructions. If you want to skip this step you can buy the prepared dough and just add the black bean purée.
For the salad:
Mix all the mentioned ingredients together. Allow it to sit for about 15 minutes. Serve with black bean tortillas.
