One of the richest ingredients of Mexican cuisine is the yerba santa leaf. It has a peculiar flavor and is wrapped around foods such as fish to highlight their flavor. This simple recipe, Bass in Yerba Santa, is a quick and easy recipe that offers authentic flavors of Mexican cuisine.


  • 6 bass pieces
  • 6 yerba santa leaves
  • 5 tablespoons butter
  • 1/2 kg. tomato
  • 2 thyme sprigs
  • 3 garlic cloves
  • 1 tablespoon oregano
  • 1 onion
  • salt and pepper

Rub the slices of sea bass with salt and pepper to taste, wrap each slice in yerba santa leaf. In a oven-safe dish greased with butter, arrange the fish, cover with tomato, garlic and onion (previously chopped), oregano and thyme. Spraying it with the whipped butter, bake in the oven for 25 minutes. Serve.
