This recipe does not actually have chicken, but the beans create the appearance of chicken, and hence the name of the dish. They say that originally this recipe of our beloved Mexican cuisine was born in Sonora, but they appropriated it in many states of northern Mexico. This original Painted Hen Recipe is from the book “The Senators that Cook” published in 1964
INGREDIENTS for Painted Hen
- 2 cups corn
- 1 beef tail
- 1 1/2 cups of pink beans
- 1 head of garlic
- 2 green chilies
- 2 bunches of spinach
- Salt to taste
INSTRUCTIONS
Boil corn in water with two teaspoons of lime for 30 minutes. Removed from fire, wash perfectly and remove from cob. Cooked again until the kernels burst. Place other ingredients in different pan and cook. When the meat is soft, add the spinach torn into large pieces and corn; Boil everything together to season, for 20 or 25 minutes, adding the salt to taste. Serve very hot.
